En una perspectiva histórica, el café ha sido el único producto que ha logrado estabilizar el crecimiento económico a través de las exportaciones pese a las recurrentes crisis de precios en el mercado internacional. Ayudó, de manera significativa, a conformar un mercado interno irrigando ingresos y generando empleo. Integró económicamente las regiones con apertura de vías de transporte terrestre y el estímulo al desarrollo de los ferrocarriles, y dio ocupación a una ingente masa de campesinos y jornaleros en una economía agraria de vertiente que sostuvo el modelo primario-exportador durante buena parte del siglo. De otra parte, fue alrededor de este producto que se generó en el país, y en particular, en el sector agropecuario uno de los desarrollos institucionales de mayor impacto en las regiones cafeteras, alrededor de la Federación Nacional de Cafeteros y el conjunto de organizaciones de prestación de servicios a la industria cafetera que se dejaron sentir en todos los rincones y veredas cafeteras. Fue también el producto que en la segunda mitad del siglo XIX le dio salida al capital comercial acumulado en el negocio del oro, la quina, el añil y el tabaco, a través de la creación de haciendas cafeteras y el montaje de las primeras industrias en este milenio. De otra parte, puede decirse que el café, así como generó en algunas regiones una democratización del acceso a la propiedad rural, en otros ayudó a consolidar el latifundio y relaciones de producción atrasadas basadas en instituciones coloniales.

El café también dio origen a la que tal vez ha sido la agroindustria rural más importante en términos de ingresos, empleo, estabilidad: el procesamiento del grano en la finca (lavado, despulpada y secado y en algunos casos trilla). Finalmente, el café logró articular de manera más estable a la economía con el mercado externo; sirviendo de alguna manera de instancia de aprendizaje y conocimiento para muchos comerciantes y empresarios que después incursionarían en el sector industrial.
