[fusion_dropcap color=»» text_color=»» boxed=»no» boxed_radius=»» class=»» id=»» open_settings=»true»]C[/fusion_dropcap]omo primer punto, La región de Sevilla Valle del Cauca de donde provienen los cafés se compone de tres Veredas vecinas llamadas Cebollal, Calamar y Maulén, su fama les precede por dos cosas, la violencia a la que han sido sometidas por años y la calidad del Café, el Banano, el Fríjol, el Maíz, el Lulo y el Pimentón que producen sus tierras.
La idea de Café Tributo y Café Tributo Caficultores nace de la necesidad de obtener buenos precios por la producción del café de la región, de gran calidad y excelente sabor. También por el deseo de que las personas reconozcan la gran labor que realizan los caficultores, las historias de sus familias, la tradición detrás de cada taza y las diferencias de cada café.
Las fincas donde se produce el Café tienen sembrada la variedad Castillo entregada a los caficultores por la Federación Nacional de Cafeteros y las variedades nativas, Arábigo (Típica), Caturro Negro y Borbón, también variedades de alta productividad como Maragogipe, Catimor y Supremo.
En la finca La Ilusión se hacen procesos de beneficio de café en Cereza para contribuir a que la bebida exprese más notas de aroma, fragancia y sabor, mejorando la calidad de la misma. Estos procesos inician en la recolección, se seleccionan los frutos más maduros del árbol y a continuación se realizan flotes en un tanque para sacar aparte los granos “vanos” que contienen almendras subdesarrolladas, se saca el café de mejor calidad del fondo del tanque y se deposita en un recipiente plástico hermético para comenzar el proceso de fermentación en Cereza.
Después de fermentar el café cereza hasta por 600 horas dependiendo de las condiciones ambientales y la tecnología disponible se decide qué tipo de proceso usaremos para el secado, existen cuatro opciones principales con sus respectivos subprocesos:

Despulpado en Máquina y Desmucilaginado en Máquina (LAVADO)
Se deposita el café previamente fermentado en cereza (o directamente del cafetal) en la máquina despulpadora que retira la cáscara del fruto del café, inmediatamente pasa al desmucilaginador que retira mecánicamente la pulpa (mucílago) del café y deja listo para secar el pergamino en silo, elda o marquesina.
Despulpado en Máquina y Fermentado en Pulpa (SUAVE LAVADO)
Se deposita el café previamente fermentado en cereza (o directamente del cafetal) en la máquina despulpadora, al salir se vacía en un tanque (preferiblemente plástico de color negro) ya en el tanque se le puede agregar agua o no (agregarle agua acelera el proceso de descomposición de la pulpa (mucílago)). Al no agregar agua el proceso de descomposición es más lento con la ventaja de brindar mejores características de sabor a la bebida. Cuando la pulpa se ha descompuesto por completo (con agua o sin ella) se lava con agua quedando listo el pergamino para secar en silo, elda o marquesina.
Despulpado en Máquina y Fermentado en Pulpa (HONEY)
El proceso para producir Honeys (Red Honey, Yellow Honey, Black Honey) consiste en que después de fermentar el café en cereza, pelarlo y fermentar en pulpa, no se lava, se lleva a secar directamente en marquesina o elda. La clasificación en colores del honey depende del porcentaje de mucílago seco sobre el pergamino obtenido después del secado completo.
Secado en Cáscara (NATURAL)
Un buen natural procede de la mejor selección de cereza, una buena fermentación en cereza y un delicado proceso de secado en Marquesina o Elda.
